Upper Grill
Cast iron 150 mm modules for cooking lean fish and meat. Flat as
standard and ribbed for products with high fat content as optional
feature.
Lower grill and heat generator
IRON STONE grills use cast iron modules measuring 125 x 425 mm and
weighing approximately 53 kg with 17 pyramids in a single piece.
The function of the pyramids is to accumulate and spread the heat
and generate smoke when the fat drips onto them.
This system has many advantages. Compared to volcanic stone, ceramic
and briquettes, which have a higher porosity index and are extremely
fragile, cast iron has a much lower porosity index and is far more
robust and durable.
These models can easily be taken apart and washed with neutral
degreasing detergents.
With this system, a large proportion of the fat falls straight
into the fat tray, thereby preventing excess smoke and flames. However,
part of the fat also falls onto the pyramids to produce smoke and
flames to give the products just the right grill flavour.

Burners
Made of cast stainless steel, they provide high performance thanks
to their thick walls and 9 kw power horizontal flame on both sides,
protected by a stainless steel roof
Each zone measures 30 cm and has a tap and two burners with a total
power of 18 kw.
Control valves
Mounted on the front, in an area away from the flames to prevent
their overheating. Thermocouple control, pilot light and manual
ignition.
Heat deflector
Underneath the burner there is a removable localised stainless
steel heat deflector that prevents the heat from being reflected
downwards, thereby helping to direct more heat upwards.
Fat tray
All grills have one or more fat trays, depending on the model. You
can add water to generate a slight touch of wetness while making
cleaning easier.
